Soupie Bros. & Imperial

This month, we bring you unique products from two different artisans. The first is Soupie Brothers, based in Pennsylvania. The Soupie™ is an Italian-style dry-cured meat with roots in a small village called Isca, in Italy. When they immigrated to the United States, landing jobs in the coal mines in Pennsylvania, the Italian coal-workers brought recipes of cured goods that would be perfect fuel for their hard labor. Today, Soupie is still intertwined with the coal-working community of Pennsylvania. The founders, Keith and Greg, have been eating the product for years, a product passed down in family tradition. They painstakingly create every product, each taking about 6 months to create.

Imperial Chorizo is made by Pata Negra LLC, an American company based in Gloversville, NY, at the base of the Adirondack Mountains. They brought ancient recipes, expertise, and tradition from the heart of old Spain to make high-quality, beautiful cured meat products. Imperial is an award-winning company that has been operating for over 25 years. Imperial also has operations in Spain, which enables the company to stay close to their roots and continue to create the same amazing products.
