Involtini: Feta & Prosciutto Rolls

A nice light, refreshing appetizer, perfect before a heavier meal
Prep time: 20 min
Serves: 4-6


Ingredients:
3oz of prosciutto, thinly-sliced
2 oz fresh feta cheese
A few leaves of fresh basil
1/3 cup extra-virgin olive oil


Instructions:
   1. Using a sharp knife, cut prosciutto slices into strips about 1” x 2”
   2. Cut the feta into long skinny rectangles the same width as the prosciutto slices
   3. Make thin slices of the fresh basil
   4. Take a piece of feta, rest it on the narrowest edge of a prosciutto rectangle along with a sliver of basil, and tightly roll it up, pressing gently to ensure it stays together
   5. Set the roll in a dish, resting vertically against the side of the container
   6. Roll the rest of the prosciutto and feta wraps
   7. Once all of the rolls are in the dish, douse them with enough olive oil so that they are saturated (the rolls will absorb a lot of oil, which will keep them moist)
   8. Serve, or refrigerate (if refrigerated, allow to come to room temperature again before serving)
